I think I'm turning COUNTRY!!!

I have been loving my new ipod play list that I have listened to through most of our Utah trip.  Now I can't stop listening!  
Some of the groups I've been enjoying are:  Sugarland, Ryan Shupe and the Rubberband, Rascal Flats, Carrie Underwood,  Billy Gillman, Alison Krauss, Steve Wariner, Alan Jackson, Shania Twain,  Collin Raye, Diamon Rio, Brad Paisley, Dixie Chicks, and Kenny Chesney.  

Who knew I'd love this music?

And best of all:  I got me some cowboy boots from my wonderful sister-in-law.  Yee Haw!!

Hey... I think I'm country now!  Don't I totally look like a cowgirl?
(or ... sort of - I need a cowboy hat!)

I also made a yummy new veggie last night for my lean and green.  Here is my plate:

I had my chicken patty (caramelized onion chicken burger) I love from Costco and 1/2 cup low fat cottage cheese.  Those items were my "lean" and the "green" was 1 cup of sauteed red cabbage, and 1/2 cup mashed cauliflower.  Wow, was it so delish!!

The only fresh veggie I had was the red cabbage - which I actually only had on hand for a science experiment for my daughter - but I found this recipe on line from Rachel Ray and I loved it!  (note - I used 2 T spenda instead of the sugar in the recipe) I love red cabbage now!!  It was so flavorful.  The hubs even liked it, although I gave him more of the cauliflower and I put some light laughing cow cheese on his cauliflower.
Hey, maybe country folks love red cabbage?!!  I bet that's it!  (tee hee)

I am working on my 2011 goals - BOTH of us are.  I will be posting it soon.  I'm excited for the new year!    We have some set backs (again) but we are charging forward and gonna make it rock.  Who is with me?   Life is good!!

Margene... so funny... I was out shopping with my daughter for boots for her before Christmas and I really, really wanted cowboy boots! Cost too much in the stores, but a thrift shop is a definite possibility. You're looking great!

You look like a cowgirl to me! (Being from Texas, I'm a good judge.) Sugarland is my favorite country band right now. I could listen to their stuff for hours!

Thank you for the encouraging saying the other day...so very true!

and I've got EVERYTHING on my ipod. Country, rock, 60 to the current year, classical, blues...My favorite to jam to is 80's and COUNTRY (yee haw)....

Ride 'em cowgirl! Now when I come out there to see you we will need to find a country concert to go jam out to. You already know my love is COUNTRY and the UTAH UTES...LOL smile

I use to wear boots all the time driving truck. I miss them at times. Might just have to look into a pair for me later on. You look so cute in them. Your dinner looked great too. I haven't had the energy lately to plan or bake or cook, this cold is kicking my butt. UGH!!! I hate this cold.
I have to work up my goals too. Just so tired right now running behind. Maybe tomorrow.

Country music is SO addictive. And what I like best about it is that everyone can actually sing, and I can't necessarily say that for all pop stars (are you listening Bieber?)

Dude, I am SO going to look into those chicken burgers, they sound delish. I often think about how much easier dieting would be if I loved veggies. Boo.

i love mashed cauliflower. i put in curry powder and a smidge of half 'n half. almost like mashed potatoes! (well, not really)
