Knox Blox Recipe (Doubled):



6 envelopes knox unflavored gelatin
2 big packages sugar free flavored jello (.3 oz.)
6 cups boiling water

Mix the flavored jell-o and the knox gelatin together in a bowl. Add the boiling water and stir until completely disolved (couple minutes). Pour into a rectangular baking dish and refrigerate for a few hours. Cut up into 1 inch squares! (Put a bunch into little snack size zip lock bags for fun quick snack).

TIP: I like to make the sugar free orange and add 1-2 tsp. of coconut extract before I pour it into the dish. Yum!

TIP 2: I have made the strawberry/banana jello and added 1-2 tsp. of banana extract to enhance the banana flavor before I poured it into the dish, and I really liked that too!!

TIP 3: I made the lime jello and added coconut extract for a totally different twist! I liked it, hubby didn't (but he's not a big knox blox eater anyway).


Medifast Muffin Recipe:

YOU CAN TRY DIFFERENT VARIATIONS OF OATMEAL AND SUGAR FREE SYRUP!!

5 packets Medifast Oatmeal (I used Peach)
1 packet Medifast Pudding (I used Vanilla)
2 t. Baking Powder
1/4 t. Baking Soda
6 oz. Davinci Sugar-Free Syrup flavor of choice (I've tried Coconut & Caramel)
6 oz. Cold Water

Preheat oven to 350*
Combine dry ingred. in mixing bowl. Combine wet ingred. in another bowl. Slowly add the liquid mixture to the dry ingredients, stirring, until mixture is a thick muffin batter consistency. Let batter sit for 5 minutes. Drop by tablespoon into 6 muffin cups which have been sprayed with nonstick cooking spray. (Don't use paper muffin cups, they stick terribly)

Bake for 18-20 minutes or until inserted toothpick comes out clean. Remove immediately from pan. One muffin = one Medifast meal. You can make smaller muffins by putting them in 12 muffin cups and then two muffins would = one Medifast meal (as shown in pic) but I now prefer one bigger muffin. Refrigerate them if not eaten the same day or freeze them.

VARIATIONS I'VE TRIED SO FAR (and liked!):
1. Maple&B.S. Oatmeal + Choc. pudding + S.F. Choc. Chip Cookie doe Syrup
2. Maple&B.S. Oatmeal + Choc. pudding + S.F. Peanut Butter syrup
3. Apple&Cinn Oatmeal + Van. pudding + S.F. Caramel syrup
4. Apple& Cinn Oatmeal + Choc. pudding + S.F. Peanut Butter syrup
5. Maple&B.S. Oatmeal + Banana pudding + S.F. Banana syrup



Kale Chips:



Clean and pat dry your kale.  Cut into smaller pieces.  Drizzle with some olive oil and sprinkle with sea salt.  Lay them out on a sprayed cookie sheet and bake at 350 degrees for about 15 minutes until just crispy.  They practically melt in your mouth!  Yum!



Medifast  Peanut Butter Fudge Balls:
(Originally taken from Sandy's Kitchen here; I just modified it for what ingred I had to use)

I used 5 puddings & 5 hot cocoas for 10 meals / 40 balls to freeze)

1 Medifast chocolate Pudding
1 Medifast Hot Cocoa
4 T. PB2 (powdered peanut butter)
1/4 Liquid (half water - half sugar free peanut butter syrup)

Mix together, form into balls (two medifast packets should be 8 balls). Freeze.
Every 4 balls = 1 Medifast Meal



Medifast Chocolate & Peanut Butter Balls:


6 Packets Medifast hot cocoa
Approx. 3 oz. water
Approx. 3 oz. Sugar Free Peanut Butter Syrup (optional, you can just use all water if you want)
PB2 (powdered Peanut Butter from the Bell Plantation - less than 1/2 the calories of regular PB!)


Mix the hot cocoa and liquids together until fudge like consistency (may need to add more liquid if too thick).
Scoop out into balls on parchment paper so that you have 24 balls.


Mix 6 T. of PB2 separately and spoon out on top of each ball.
Then freeze the whole tray for a couple hours.  Take out of freezer and fill 4 balls per ziplock snack bag and store in your fridge.  1 bag of 4 balls = 1 Medifast meal + 1 condiment.  Great to just grab and go.  SOO Yummy!


You can also make these by just including the PB2 in with the cocoa and just have them all mixed together.  They are still delicious.




Medifast Soup Chips:



1 Packet of a Medifast Soup.  Mix with 3 T water and a squirt of yellow mustard.  Spread out on parchment paper and microwave for 2.5 minutes or so (careful not to burn).  Then cool and break into chips.  It's nice to have something to crunch on.  I eat mine with a slice of light laughing cow cheese.






Medifast Waffles:





1 Packet of Medifast Pancake mix
1/8 cup Egg Eeaters
1/4 cup Water
1/2 t. Baking Powder


Mix together and put in your sprayed waffle maker.  Makes two waffles.  Drizzle some Sugar Free Walden Farms pancake syrup on top.  Tastes SO good!!



Medifast Oatmeal Cookies


Ingredients:
1 MF Maple & Brown Sugar Oatmeal
1/4 t. Cinnamon
1 packet Splenda (I used Stevia)
1/3 cup water
1/8 t. baking powder
1/2 t. vanilla
1 T Peanut Butter (I used PB2)

Preheat oven to 350.  Mix all ingredients and let sit for 5 min.  Line a cookie sheet with parchment paper or spray with cooking spray.  Drop by spoonfulls and bake  for 12-15 minutes.


Medifast Vanilla Spice Cookies:


1 Vanilla Shake mix
1/4 t. Baking Powder
1 T. sugar free caramel syrup in a 1/4 cup measure, then fil the rest of the way w/ water.
1/4 t. Vanilla
1/2 t. Pumpkin Pie Spice
1/2 T. Cinnamon
1 Packet Spenda
Mix all the dry ingredients and we ingredients seperately. Add wet to dry and mix it up. Scoop out 5 cookies onto a Pam sprayed pan and bake at 350 for 15 minutes. Counts as 1 Medifast Meal.
[I quadrupled the recipe using 4 vanilla shakes and the batter wasn't thick enough so I added a scrambled eggs packet and then made 25 cookies for 5 meals; every 5 cookies equaled 1 medifast meal.]



Medifast Crunch Cookies: (found on the Medifast Facebook Discussion Boards)


1 Crunch Bar (I used Chocolate, but you can use Caramel, PB, Smores or whatever)

2 Brownie Packets
4 T. Water
Soften crunch bar in microwave for 15-20 seconds then mix all the ingredients together very thoroughly. Spray plate with Pam & divide mixture into 3 equal portion cookies. Microwave for 2-2.5 minutes. Let cool. One cookie = One Medifast meal. YUM. This is a great way for me to help my crunch bars last longer & the cookie is really good and filling!


Medifast Melted Cheese Sandwich:



1 Medifast Soup Packet (I used broccoli but you can use cream of chicken or tomato as well)
1/4 t. Baking Powder
At little less than 1/4 cup of Egg Beaters

Mix together and pour onto a sprayed microwave safe plate.  Microwave for 90 seconds.
Slice it in half and toast each half in your toaster... watching it so that it doesn't burn.

Spread a wedge of light laughing cow cheese and put the two slices together.  You can also use any other low fat cheese. They are a little dry but yummy.  My hubs used some Walden Farms ketchup on his.  Note - the protein used for this would need to be deducted from you lean and green.


Medifast Chocolate Cake Brownies:



14 Medifast chocolate shake packets
2 Scrambled Egg packets
4 t. Baking Powder
10 Packets of Spenda

Add enough water (and sugar free syrup for specific flavoring if wanted - I tried Peppermint patty) for a cake batter like consistency.  Bake at 350 for about 40 minutes - check with a knife in center to see if it comes out clean when done.  Cool and cut into 16 portions.  Each portion = 1 Medifast Meal.  Drizzle with Walden Farms sugar free chocolate syrup.  Freeze other potions for later.  (You can also make a smaller version of this to try it first before committing so much of your Medifast food - but we have enjoyed these.)
